Frozen Farm-Raised Small Horse Mackerel
Small horse mackerel with a slender silver body, a blue-green back and a row of raised scutes running along the tail end of the flank. The eye is large and clear, the fins are intact and the tail is deeply forked. The photos show two fish plated together, one fish on its own, and a pair resting on crushed ice in a shallow basket.
Pan-fry or grill the fish whole, or deep-fry them until the skin crisps. They also take well to a short marinade and a turn on the barbecue. The flesh is fine, so turn the fish gently to keep it whole.
