Fresh-Frozen Whole Flounder Flat Fish
Whole flounder, a flat fish with both eyes on the upper side of a broad, flattened body. The skin is mottled grey-brown above and paler below, with a fine, even scale pattern and a soft, fan-shaped fin running along the edge. The photos show the fish whole, a view of the pale underside, and a fillet lifted from the frame to show the white flesh.
Pan-fry the fish whole in butter until the skin crisps, or steam it with ginger and spring onion. The flesh is thin and delicate, so it needs only a short time in the pan.
